100% NATURAL
The Scauzi Agricultural Company of Pantelleria cultivates its land entirely by hand, adopting a 100% natural farming process: no machinery, no fertilizers, no pesticides. We use cultivation techniques that allow plants to grow spontaneously and freely, copying and respecting the natural cycle of nature.

From our agro-bio-forestry rows come product that tell the story of the strength and fragility of Pantelleria.
Our highest expression is Terra Assouli: our extra virgin olive oil obtained from Biancolilla olive trees grown on wind-swept volcanic soil.
Alongside it, wild oregano naturally dried in the sun, honey that reflects the island’s spontaneous biodiversity, and vegetables and fruits cultivated without forcing nature, following its authentic rhythm.

Pantelleria is an ancient land shaped by wind and fire; a volcanic island at the centre of the Mediterranean where nature reveals itself in all its force.
The rock is black and mineral; the sun intense and constant; the wind shapes the trees, bend them,forcing them to grow low and strong.
Life on Pantelleria regenerates thanks to the invisible dance of the elements: from the breath of the Wind, which pushes the clouds, oxygenates and caresses the herbs, to the precious humidity that rises from the sea like a Secret Source.

In this delicate balance thrives an extraordinary biodiversity of insects, wild plants, aromatic herbs and fruit trees that coexist in a complex and vital system: helichrysum,rosemary, wild fennel, capers, myrtle, strawberries trees, oregano,olive trees, figs, mulberries, apple trees, almond trees, lemons, vines and broom.

Scauzi Farm cultivates its land entirely by hand, choosing a 100% natural agriculture: no machinery, no fertilizers, no pesticides. It is work made of daily presence, observation and patience. Plants grow without forcing, spontaneously and freely according to their own rhythm and in full respect of the natural cycle of nature.
AGRO-BIO-FOREST SYSTEM
We broadcast sow, using clay seed balls or direct seeding, allowing growth to occur spontaneously and without forcing.
We do not impose rigid rows or create monocultures; instead, we encourage a biodiverse ecosystem in which olive trees, fruit trees, aromatic plants and spontaneous vegetation coexist and support one another.
The organic matter that naturally develops is cut and left on the ground as mulch, protecting the soil and retaining the moisture of the night dew-precious on an island where water is scarce.
In this way the trees grow stronger, produce in a balanced way and the soil, season after season, becomes more alive and further.

Obtained exclusively from olives hand-harvested in agro-bio-forestry rows, in respect of the traditions and biodiversity of Pantelleria, Terra Assouli holds the aromas of the Mediterranean and the authentic soul of the island and its heroic inhabitants.
AN EXCLUSIVE, BOLD
AND NATURAL OIL
Each bottle is the result of entirely manual work, from the care of the love trees to the harvesting of the olives strictly by hand, tree by tree and to the pressing carried out exclusively cold pressed.
The Biancolilla olive trees are cultivated without forcing and follow their natural rhythm, without the use of pesticides or fertilizers: this is a variety particularly suited to Pantelleria for its resistance to strong winds and drought.
This makes the management more complex and requires constant attention throughout the year, but it allows us to obtain an oil that is authentic, exclusive and deeply connected to the territory.
